Las Jaras, Waves | White 250 mL Can | 2022 | California
The 2022 growing season started off with ideal weather—perfect conditions and no heat spikes. But as the season progressed, the climate changed. Thankfully, the grapes in this wine were picked before any of that could impact them. Harvested by hand, our Albariño was brought in on August 19th, with Chenin Blanc following close behind on August 25th. Both varieties were hand-picked and whole cluster pressed, keeping things natural with no skin contact.
To enhance flavor, the juice was separated into light and hard press fractions, receiving a delicate 10ppm sulfur addition. After a day of settling, the juice was moved into fresh tanks for fermentation, with each variety vinified separately. Fermentation kicked off naturally after about seven days, using stainless steel vessels for a crisp, clean finish.
We aged these wines on light lees for eight months to develop complex textures, then blended and canned just weeks before release. While we skipped the fining process, the wine was filtered to ensure that every sip from your can—whether it’s the first or the last—tastes as fresh and vibrant as the moment it was crafted.
Perfectly balanced and designed for on-the-go sipping, this is wine without the fuss but with all the flavor.
