Jean-Marc Dreyer took over his family's estate in Rosheim in 2003, converted it to biodynamic farming, and then in 2009 walked the Camino de Compostela. He came back with one firm decision: no sulfur, ever. That's not a trend he followed. That's a guy who figured out what he believed and built a wine around it.
Origin is his skin-contact Auxerrois, macerated in old Alsatian oak foudres the traditional way. The result is a proper amber wine with enough texture to hold up to food but enough freshness to drink outside without thinking too hard about it. Charcuterie, tinned fish, a long Saturday afternoon. It works across all of those.
No added sulfur, no fining, no filtration. We don't usually stock 750ml. This one earned it.
