Corollary Wines, Cuvée One | Brut | 2017 | California
Separate base wines were made from each vineyard. Each base wine was whole-cluster pressed and settled overnight. Afterward, the wines were fermented with native yeast or EC1118 in 75% neutral oak and 25% steel barrels. Base wines remained on the lees for six months. Secondary fermentation was done with Spark yeast.
