Blanc de Noirs from San Diego County.  Made with only wild yeasts, no filtering, and minimal intervention.

Harvested September 9-10, 2021. Whole-cluster pressed at harvest; cuvee portion placed in Charmat tank. All spontaneous fermentations. Tank sealed a few days later so wine would naturally carbonate as fermentation finished. Months after fermentations complete, wine chilled and sulfited before bottling in late May of 2022.

Flavor: Hawaiian roll, candied orange peel, ripe pear, and yellow apple. Creamy bubbles.

All grapes are sourced from local vineyards practicing organic farming. Once the grapes get to the winery, they are spontaneously fermented, and nearly all wines are unfiltered, and none see the inside of a new barrel.

In addition to their diligence in low-invention winemaking, Charlie & Echo is a carbon-positive winery and gives 1% to The Planet.
