J. Brix, Uncontainable | Rosé of Cinsaut | 2021 | San Diego
These dry-farmed vines are specifically grown to make rosé, and what fun we have doing it! Foot-trod in the cellar within an hour of picking, pressed after a few hours on the skins, this is the light and bright rosé you'll want to sip all year long. Excellent as an apéritif; a go-to pairing with salads of all sorts.
Hand-picked at sunrise • Foot-trod; 4 hours on skins, then whole-cluster direct-to-press • Native barrel fermentation for primary & malolactic • 4 months in neutral French oak; full malolactic • 15 ppm SO2 pre-bottling (the only addition of any kind)
